Presumed to originate in the Caucasus area, and cultivated since approx. 1000 B.C. Rye was the main cereal until the middle of the last century, but has then been superseded by wheat.

Rye is used mainly as flour or whole-flour for the production of bread. Rye breads tend to stay fresh longer than wheat breads. Lately, it has also come to be used as flakes for musli production.
